A former neighbor of Kerry's in Fresno decided to give us some elk meat; it's ground elk. It's sitting in my freezer with the big letters on it "ELK." They are beautiful animals. Anyone have any good elk recipes? I hear it's pretty lean.
it is very lean. you can add moisure to it by making sure that you never over cook it. as an added moisture thing try adding sauteed mushrooms...it adds a wonderful flavour and it's own moisture. elk tastes phenominal! you can also add chopped uncooked bacon to it, but it's not really needed if you don't cook the knickers off the meat.
